I’m reposting this recipe because:

I found all my old posts that were lost in cyperspace and when I copied them into my wordpress they booted the recent posts out into cyberspace.

So anyhow, I  made this super yummy soup for dinner Monday evening and just had to share.

1 pound uncooked bacon, diced

1 large Spanish onion, peeled and diced

3 carrots, peeled and diced

2 ribs celery, diced

3 cloves garlic, minced

5 medium red bliss potatoes, diced into 3/4 inch cubes

6 cups chicken stock

1/4 teaspoon cayenne pepper

2 teaspoons ground coriander

2 cans (each 16 ounces) whole kernel corn

2 cans (each 16 ounces) creamed corn

1 pound (16 ounces) sharp cheddar cheese, grated

2 cups heavy cream

4 dashes Worcestershire sauce

Kosher salt and freshly ground black pepper to taste

2 bunches scallions, sliced

*Heat a stockpot over medium-high heat and add the bacon.  Cook the bacon until brown and crispy.  Remove the bacon from the pot and set aside on paper towels to drain.  Discard all but 2 tablespoons of the bacon drippings.  Add the onion, carrots, celery, and garlic to the drippings and saute’ for 5 minutes.  Add the potatoes, stock, cayenne pepper, and coriander.  Bring to a boil.  Reduce the heat to medium and simmer for 35 minutes.  Add the whole kernel corn, creamed corn, cheese, and cream.  Simmer an additional 7 minutes.  Season with the Worcestershire sauce, salt and pepper.  Stir in the scallions and crispy bacon pieces.

Makes 10 to 12 servings.

The following is an excerpt from Octamom’s site. Here she is asking us to write about our comfort/soul food.

In our home we love soups and chili’s. I know that in the winter time it is pretty much a custom to make chili for dinner to warm us up. We rarely make it in the warmer months, but there is a casserole that we make out of chili that we have all year round. We call it none other than “chili casserole”.

How could you have guessed?

After browning hamburger, drain grease and add all other ingredients except cornbread mix.
Simmer all ingredients until warm. Mix cornbread according to package instructions and place dollups over top of chili mixture. Place in oven and bake according to cornbread instructions.

Of course this is just the basic recipe, you can add any other ingredients that you may like. Sometimes we also add mushrooms and green peppers.

I’ve been tagged again, this time by Octamom. I hope she doesn’t mind that I repost the same 7 quirky things and honestly I can’t think of 7 more people to tag, but I love playing along so here it is.

1. I was a military baby, born on an airforce base in North Carolina.

2. I hate plain milk, I stopped drinking it around age 2 and once when my first grade teacher forced me to drink it because they were all out of chocolate I threw up all over her shoes.

3. I’m severely claustrophobic. Aren’t all asthmatics?

4. I memorize numbers and hardly ever forget them. I can still remember at least 75% of my high school graduating classes birthdays, and even some of their phone numbers from over 20 years ago.

5. I am still bestest friends with Carol whom I’ve known since kindergarten.

6. I used to be an avid mountain-biker. We would bike an average of 30 miles through the Hoosier National Forest regularly. Of course this was when I was much younger.

7. I am allergic to my house. I know this sounds funny to most, but I live in a log cabin and I found out after we built that I am allergic to yellow pine which is what my house is built from.
