Soul Food
The following is an excerpt from Octamom’s site. Here she is asking us to write about our comfort/soul food.
“I know you’ve got them, too, those dishes that transcend your taste buds and speak to your soul. So share with the rest of us those treats and entrees and bowls of goodness that mean home and comfort, care and nurture.”
In our home we love soups and chili’s. I know that in the winter time it is pretty much a custom to make chili for dinner to warm us up. We rarely make it in the warmer months, but there is a casserole that we make out of chili that we have all year round. We call it none other than “chili casserole”.
How could you have guessed?
1lb browned hamburger
1 can tomato sauce
chopped onion
1 can chili beans
chili powder (season to taste)
sugar (optional)
1 box jiffy cornbread mix (mixed according to directions on box)
After browning hamburger, drain grease and add all other ingredients except cornbread mix.
Simmer all ingredients until warm. Mix cornbread according to package instructions and place dollups over top of chili mixture. Place in oven and bake according to cornbread instructions.
Of course this is just the basic recipe, you can add any other ingredients that you may like. Sometimes we also add mushrooms and green peppers.
